Manual mode is where you have all of the control. You choose your ISO, Aperture and Shutter speed. You also have control over everything else that the camera lets you pick and choose from, like your focussing points, focussing modes, white balance, metering modes and way, way more than I could ever list here.

These three camera and lens controls work together to regulate the amount of light that makes it to the light-sensitive surface (aperture and shutter speed) and the sensitivity of that surface (film or digital ISO).

Of the three parts of the exposure triangle, aperture is probably the hardest to understand. But it's also usually the setting you will go to first out of the three!
